Since it’s summer, I’ve been looking for quick,
cool treats. And this pineapple slushy from Susan Voisin’s blog, Fat Free Vegan, fits
the bill. It can include 2 ingredients or 3 depending
on your taste. And it’s all done in a food processor or blender.
You need 1, 20 ounce can of pineapple chunks. Drain it and transfer the pineapple to a freezer
bag or flat container and put it in the freezer. Once it’s frozen, cut it into chunks. You
can use a butter knife like I attempted to do here. It’s a little tricky. Add it to the
food processor or blender, along with ¼ cup of non dairy milk. And blend it until
it’s smooth. This may take about 5 minutes and you may need to scrape down the sides
a few times. Taste it and if you want it to be a little bit sweeter, add some agave nectar.
This is an easy summer dessert. If you want to use fresh pineapple, you need just 2 cups.
