In this journey of taste in Ghaziabad, we have come to Railway road Bazaria We will start with Pehelwan Dhaba’s chicken curry. Come with us How old is your shop? It is more than 65 years. First Grandfather used to run it. Then father, uncle ran it. The main items are chicken curry, mutton curry and Keema kaleji These three things.
– Yes. And it begin at 1 in the afternoon.
-It starts at 1 pm. And it gets over early. How much time it takes for the chicken to get cooked from start to the end. One and half to two hours. You have added butter as well. First the gravy one is prepared. Then the chicken gets boiled and it is again cooked separately in masalas. These masalas you make on your own.
-Yes. What is so special in this masala. There is garam masala, coriander, nutmeg, cardamom So mainly it is Garam Masala. So I just saw the colour changing. The container in which you were boiling, there it was red like the tomato. But when you started frying it in this Tawa, it became dark brown in colour. And this is the typical Dhaba style chicken curry. We ordered the chicken curry. We just saw the process as to how it is made. First, in a container, the chicken is boiled in a container along with onions and tomatoes. You will find a red coloured tomato gravy. Next it is put in the frying pan… The chicken is cooked along with the masalas. And It gets a dark brown colour. And in between they keep adding the ghee and one cube of butter has also been added. And as you can see, the colour is totally red and dark brown and top you can see the Rogan. Very tasty. And as you can see, the chicken is completely red. It is boiled… It is thoroughly cooked and the masalas have gone inside the chicken. very tasty Panditji, How many leaf bowls are you arranging? It is 1, 2, 3…19 At a time, 19 to 20 bowls are made. What is the significant thing here you know? His face is always focused down here. Anyone who comes early or late He remembers who came when and will accordingly give them the bowls. Ya I was noticing his observation. he was saying that after this you came Like I am waiting for an hour. he will instantly tell that you came after him or him. This is the experience of 45 years. The best thing that we liked about Panditji is that he keeps smiling. That is why there is this so much sweetness in the dish. Please tell your name. Its Rampur Verma. It is like an addiction. The more time you wait, the more taste you will get in this. Okay one needs to stand for an hour.. And if your turn comes early, the taste might lessen. No then its fine , I will stand and wait. Give me when the thing in the Degh is almost finished. Wow the taste is just amazing. After a lot of hustle, finally we got hold of a bowl of Panditji’s special Matra chaat. Which you can say is a cross between fruit chaat and Matra chaat The process of making it is very simple. First the fruits like apples and bananas are cut into it. then goes the tomatoes, onions, green chilies and ginger. After that boiled Moog Dal id added to it. Then goes the boiled yellow peas. then chaat masala, sweet and sour chutney. All those are mixed to prepare this Matra chaat. The taste is very good. Totally sweet and sour. Ultimate. It took us 1 hour to procure this bowl full of he Chaat but is worth it. If you come to Ghaziabad Then you will find him adjacent to the Oriental Bank Of Commerce in Lohia Nagar. Till evening 7 pm until when the stock lasts. And he he brings one Degh of Matra. And in a small Degh, he has Moong dal. He mixes all of these and makes the Chaat. And if you get three four bowls packed then panditji gives you a complimentary moong and matra mix to try. If you are coming to Ghaziabad, this is one stop that you cannot miss. Come let’s finally take you to The famous omelette shop at Navyug market in Gaziabad, Gandhi Omelette. Please give us an Egg Roll. In the morning they sell Puri Sabzi? In the afternoon they sell Chole Bhature and then the omelette. This same fellow is there in the morning as well. No someone else is there but they are from the same family. It was mainly started by his father. This omelette shop. The name of the shop is after his father. At first there was the sweet shop. From sweets they arrived at omelette. It is truly delicious. It is totally made in butter. On entering the shop we noticed that three four people were beating eggs only. And had made it completely frothy. That much froth doesn’t comes out if you do it at home. I don’t know how long they beat it. But after that they put it on bread slices. A totally foamy beaten egg mixture. Then onions, green chilies some masala and they slowly began to fold it from one side. And then it is cut into pieces and…
-On slow heat. And that’s how the egg roll finally gets done. Very tasty, fluffy and spongy. And its served along with ketchup and Green chutney. This is Mohan Fruit cream This reminds me of Chandni Chowk’s Giani fruit cream. It has pineapple and banana, these two things. It has apple, banana, cashews and raisins. And pineapple as well.
-Yes. Okay this is totally ready. It is pre mixed. You sell them in these bottles.
