Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make amrakhand today. This is a very easy and simple recipe. Here are the ingredients. 250 gm chakka. This is malai chakka. You can get it easily in the market. If you want to make this at home Then buy 1 liter full cream milk. Make dahi from milk. I already have posted recipe how to make curd. When curd sets well then transfer it into a cotton cloth. Tie it and let all the water get drianed over night. Next day almost 250 gm chakka is ready from 1 liter milk. Why I store bought chakka? Milk costs about Rs. 45 to 50 per liter . And chakka is also available at Rs.50-60 for 250 gm. Less efforts. So I am using store bought chakka. If chakka is not available at your place then you can make curd. Or you can buy greek yogurt, strain it for a while & then use it. You also can use readymade curd, strain and use it. Take same quantity of sugar as chakka. Means 250 gm sugar for 250 gm chakka. Mango pulp. Took 2 alphanso mangoes. Peel & chop them into pieces. Blend it in mixer. Didn’t added milk or anything while blending in mixer. So this pulp is much thick. 1/2 tsp cardamom powder & a little nutmeg. To begin with strain the chakka. Take a puran strainer over a bowl. Transfer chakka into strainer & strain it well. You also can strain it through puran yantra. You can blend this in mixer. If you have food processor Transfer all ingredients in mixer or in food processor and blend them. If you use mixer then there are chances that shrikhand may become a little thin. No issue with food processor. You can easily make this in food processor. You can’t blend so thick ingredients in mixer. You need to add little milk. Let’s strain it so as to remove lumps if any. We will get very fine consistency of chakka. I have strained the chakka well. Add powdered sugar. This is really thick. Add about 3-4 tsp milk to adjust consistency. Mix everything well together. Beat this chakka or shrikhand really good for about 4-5 minutes. You can use hand blender here. Shrikhand is beaten well. This is shrikhand base. You can add cardamom powder, dry nuts accroding to your taste. This is basic shrikhand. If you want to make keshar pista shrikhand then dissolve a little safforn in milk Add pista slices and saffron in shrikhand & keshar pista shrikhand is already. If you want to make basic shrikhand Then add only cardamom powder in this and basic shrikhand is already. If you want to make pineapple shrikhand Then make pineapple pulp in blender, cook it a little & add that pulp in shrikhand. Add few cooked pineapple chunks in shrikhand. Then pineapple shrikhand is already. Let’s add mango pulp in this. No need to cook the mango at all. Mix well. You can decide the quantity of mango accroding to your taste. Alphanso mango has a very dark color. Also it gets nice consistency. So I will suggest try to use alphanso mango for making amrakhand. About 1/4 cup I have made pulp of 2 mangoes. But pulp of 1 mango is enough for 250 grams chakka. You can add small mango pieces if you want. Mango bites taste nice in amrakhand. I am adding 1 tsp more pulp. Beat it again. This is nice and fluffy. Amrakhand is just yummy. Add cardamom powder & also a little nutmeg powder. If you add nutmeg in any sweet dish or dessert then it’s tast enhances. About 1/4 tsp nutmeg is enough. No need to add much. Mix well. Amrakhand is already. It has got nice consistency, texture & color. Let’s serve now. Homemade shrikhand or amrakhand gets nice consistency. It is nice and fluffy. Garnish with few pistachios. Do try this amrakhand recipe at home.
