Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make kolambi bhat today. Let’s see the ingredients first. We will need kolambi to make kolambi bhat. I have taken 250 gm kolambi. I have devained kolambi Removed the shell and the black vein in it. Later I have washed the kolambi really good and drained all the water from it. We will need 2 tbsp ginger garlic paste, 1 tsp to marinate kolambi and 1 tsp to make masala for rice. 1/2 tsp turmeric powder, 3 tsp red chili powder out of which 1 tsp will go with kolambi and 2 tsp will go with masala for rice Lemon juice for marination and salt to taste. The ingredients for making rice are 1 cup akhha basamati rice, 1 cup finely chopped onion, 1/2 cup finely chopped tomato, 1 tbsp garam masala. You can use any garam masala Or Malvani or aagari masala. 1 tbsp coriander powder, salt to taste and corinader leaves. To begin with take rice into a bowl Wash it really good with water 3-4 times. I have wased basamati rice really good. Add enough water and soak for 30 minutes. Let’s marinate kolambi now. Add 1/2 of ginger-garlic paste, turmeric powder, 1 tbsp red chili powder, lemon juice and salt. Rub all this masala well to kolambi. Mix everything well together. After mxing well cover and marinate for about 15-20 minutes. Let’s make tadka now. I forget to tell cumin seeds while telling you the ingredients. We will also require some whole spices. I am making ghee tadka. I have used 3 tsp ghee. Add 1/2 tsp cumin seeds. You can use oil instead of ghee. Ghee gives nice flavor . Fry onion until it gets nice golden color. I have fried onion well. It has begun to turn nice golden. Add tomato, ginger-garlic paste, Red chili powder, garam masala, coriander powder and salt. Mix well and fry the masala until it releses oil. Fantastic flavor!! Masala has nicely come together and tomato is well mashed in that masala. Add marinated kolambi. Add a little coriander leaves. Mix well. Kolambi has got nice coating of masala. Looking just yumm!! Add a little water. Just a little. No need to add more water. Add 2-3 tbsp water in the bowl in which kolambi is marinated. Add that water. Cover and cook the kolambi on medium for just about 4-5 minutes. This is small kolambi. These are small prawns. These cook quickly. Don’t take much time. If you overcook for about 10-15 minutes Then it will get a little elastic or chewy texture. Kolambi should remain nice and soft. So don’t over cook. Also it should not remain raw. So 4-5 minutes is the perfect time to cook the kolambi. Kolambi is getting cooked. Till then I have boiled water in a pan to cook rice. Add whole spices in this water. 4~5 peppercorns, 2 green cardamom, 5~6 cloves, little cinnamon and 2 bay leaves. Add everything into water. Add salt, soaked rice and cook it really good. I have cooked this rice on high heat for about 7-8 minutes. Cook the rice completely. No need to cook it half at all. Cook it completely. Rice is nicely cooked. Drain all the water from rice. I have drained the cooked rice. I have cooked the kolambi for just about 4-5 minutes. That too on medium heat. It has got nice color. Let’s check if the kolambi is cooked. It is nicely cooked. Let’s add this rice in it. You also can pre cook the rice. But rice loses juicy texture due to it and it becomes a little dry. So whenever I want to make rice like kolambi rice or other rice in which rice has to be separately cooked I cook it at that time only. So that it remains separated and also it’s juicy texture is maintained. Mix well. This is looking awesome. After mixing the rice well cover, lower down the heat on lowest possible setting And steam this rice for about 10 minutes. Let’s give it dum. On lowest possible, on my induction 200 watts. Put it on the lowest possible setting of your gas or put a skillet below the pan. I will steam this really good. I have steamed this rice on lowest possible heat for about 10 minutes. Turn off the gas now. Wow… Let’s take it out. Rice is nicely cooked. It has got fantastic texture, color. This is juicy but not sticky. You can see the texture. It has nice coating of spices.
